Spicy cucumber salad

Ingredients

  • 1 large cucumber, peeled

  2. Cut cucumber into thick, diagonal pieces.
  3. Place in a bowl and sprinkle with sugar, vinegar and a large pinch of salt.
  4. Let it rest in the fridge for about 30 minutes.
  5. In the meantime, put the other salad ingredients in a bowl.
  6. Drain the cucumber and add it with the remaining ingredients.
  7. Heat a heavy-bottomed grill pan or skillet until hot but not smoking.
  8. Rub the chicken with oil, season with salt and pepper, and fry, skin side down, until the skin is crisp and brown and the chicken is practically cooked, about 8 minutes.
  9. Flip the chicken over and leave it on the flesh side for a few more minutes to finish cooking.
  10. Let the chicken rest, then slice each breast diagonally and serve with a pile of cucumber salad.
