Spicy couscous salad

  • 100g couscous
  • 220 g canned chickpeas, rinsed and drained
  • 100 ml hot chicken stock
  • Zest and squeeze 1 lemon
  • 1 roasted red pepper, chopped
  • 25 g roasted almond flakes
  • a handful of mint leaves, chopped
  • 2 tbsp natural Greek yogurt
  • 1 teaspoon harissa

Soak 200 g couscous. Mix with 2 tbsp
Olive oil, juice 1 lemon and bunch
chopped mint and parsley. Put aside.
Drain 400 g canned chickpeas; zip along
2 spring onions and 1 teaspoon harissa.
Chop 1 roasted red pepper and stir
through. Form into balls and fry in a pan
Stir in a little oil until golden brown. Mix 1 tbsp tahini
Mix with 6 tablespoons of yogurt and then serve drizzled
over couscous and falafel.Make it for children
Plain Couscous – Mix in 100g of cooked couscous
1 chopped red pepper, 220 g can
chickpeas, 1 teaspoon cumin and 2 tbsp
Olive oil. Stir in 2 tablespoons of yogurt
grated cucumber, then pour over.

Preparation steps

  2. Pour the broth over it
  3. Cover and let sit for 5-10 minutes until the couscous has absorbed the broth
  4. Allow to cool slightly
  5. Mix lemon zest and juice, pepper, almonds and mint
  6. Pour into a container
  7. Top with the yogurt
  8. Drizzle with harissa
