Spicy Chicken Cacciatore

Ingredients
- 1 tbsp olive oil
- 4 chicken thigh portions, with skin
- 2 red peppers, deseeded and cut into strips
- 1 medium red chili, deseeded and sliced
- Glass of red wine (approx. 175 ml)
- ½ amount of tomato sauce (see “Suitable”)
- 1-2 handfuls of black olives
- chopped flat-leaf parsley for serving
Preparation steps
1. Preheat oven to 180°C/160°C fan/gas 4.
2. Heat the oil in a deep, ovenproof roasting pan large enough to accommodate the chicken in a single layer.
3. Season the chicken pieces all over.
4. Place the pan on the stove and fry over medium heat for 7-10 minutes on each side until well browned.
5. Remove the chicken with a slotted spoon and set aside.
6. Add the peppers and chilli to the pan (there should still be plenty of fat) and fry for 10 minutes until soft and starting to brown around the edges.
7. Pour away excess fat.
8. Pour in the wine and stir well while it bubbles, 1-2 minutes.
9. Add the tomato sauce to the pan and stir again.
10. Add a little water (up to 150ml) to create a thick, pourable consistency.
11. Place the chicken in the sauce and sprinkle with the olives.
12. Cover the pan and bake for 30 minutes.
13. Remove the lid of the pan and let the chicken roast for another 15 to 20 minutes to crisp up.
14. Spoon off any fat that has risen to the surface.
15. Sprinkle with parsley.
16. Serve with some rice, mashed potatoes or polenta.
