Ingredients

  • 200g dates, roughly chopped
  • 200 ml milk, plus a splash
  • 250g butter, softened, plus a little butter for greasing
  • 280g self-raising flour
  • 200g light, soft brown sugar
  • ½ tsp baking powder
  • 4 large eggs
  • 1 tbsp spice mix
  • 2 tsp vanilla extract
  • 3 small red apples
  • Squeeze out lemon juice
  • a handful of toffees
  • some powdered sugar for dusting

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Grease a 20 x 30 cm baking tray and line it with baking paper.
  3. Place dates and milk in a small saucepan and bring to the boil.
  4. Remove from heat and set aside to cool for 15 minutes.
  5. Blend the date mixture in a food processor or blender until smooth.
  6. Scrape the date puree into a large mixing bowl.
  7. Add butter, flour, brown sugar, baking powder, eggs, spice mix and vanilla to the bowl.
  8. Set the mixture aside.
  9. Quarter and core the apples.
  10. Cut the apples into very thin slices and drizzle in some lemon juice.
  11. Quickly mix the cake ingredients with an electric whisk until smooth.
  12. Scrape the cake batter into the baking sheet.
  13. Arrange the apple slices in overlapping rows on the cake.
  14. You should be able to fit 3 rows lengthwise into the tray.
  15. Bake for 45-50 minutes, until a skewer inserted into the center of the cake comes out clean.
  16. Let the cake cool in the tray.
  17. Put the toffees in a small saucepan with a good splash of milk and gently melt, stirring, until they are liquid.
  18. Dust the cooled cake with a little powdered sugar.
  19. Drizzle the melted toffee sauce all over the cake.
  20. To serve, cut the cake into squares or slices.
