  • red onion, halved and sliced
  • 425 ml hot chicken stock (one cube is enough)
  • a pinch of saffron threads, optional
  • 1 fat red chili pepper, sliced
  • 500g couscous
  • 2 x 20 packs of coriander, leaves only
  • 50 g roasted whole almonds
  • a handful of dates, roughly chopped (we used Medjool dates)
  • Juice ½ lemon

Preparation steps

  1. Heat some oil in a roasting pan
  2. Add the onions and sauté until just softened, about 5 minutes
  3. If necessary, add saffron threads to the broth while roasting to add flavor and color
  4. When making fragrant chicken, use the same pan to add flavor to this dish, leaving the juice in it (you can remove some chicken fat if necessary).
  5. Add the chilies to the tray and fry for another minute, then remove from the heat
  6. Pour couscous and broth onto the tray
  7. Cover with cling film for 10 minutes
  8. Once the couscous has absorbed all the broth, quickly chop the cilantro
  9. Sprinkle the coriander through the couscous along with the almonds, dates and lemon juice
  10. Serve immediately
  11. To serve cold, let cool and then add chopped cilantro just before eating

In a large bowl, soak the couscous in the hot chicken broth for 10-15 minutes, until the liquid is absorbed and the couscous is fluffy.
Meanwhile, heat some oil in a frying pan and fry the sliced ​​red onions until soft and slightly caramelized.
Add the sautéed red onion, sliced ​​red chilli, coriander leaves, toasted almonds, chopped dates and lemon juice to the soaked couscous. Mix well.
Season with salt and pepper.
Optional: Add a pinch of saffron threads for an extra floral flavor.
