Ingredients
- 4 medium sized Bramley apples, weighing around 200g each
- 4 tbsp clear honey
- ½ tsp ground cinnamon
- finely grated zest and juice of a large orange
- 250g blackberries

- Preheat the oven to 180°C/gas 4/fan 160°C.
- Core the apples so that there is a hole in each one the size of a pound coin.
- Score the peel approximately in the middle of each apple.
- Place the apples in a shallow baking dish large enough to hold all four.
- Mix honey, cinnamon and orange peel.
- Place an equal amount of the mixture into the cavity of each apple.
- Pour the orange juice into the bowl.
- Roast the apples for about 40 minutes, spooning the juice over them occasionally.
- When the apples are almost done, place the blackberries around and on top of each apple.
- Return the dish to the oven for 10 minutes or until the juices begin to flow.
- To serve, pour the blackberries and juice over the apples.
