  • 4 medium sized Bramley apples, weighing around 200g each
  • 4 tbsp clear honey
  • ½ tsp ground cinnamon
  • finely grated zest and juice of a large orange
  • 250g blackberries

Preparation steps

  1. Preheat the oven to 180°C/gas 4/fan 160°C.
  2. Core the apples so that there is a hole in each one the size of a pound coin.
  3. Score the peel approximately in the middle of each apple.
  4. Place the apples in a shallow baking dish large enough to hold all four.
  5. Mix honey, cinnamon and orange peel.
  6. Place an equal amount of the mixture into the cavity of each apple.
  7. Pour the orange juice into the bowl.
  8. Roast the apples for about 40 minutes, spooning the juice over them occasionally.
  9. When the apples are almost done, place the blackberries around and on top of each apple.
  10. Return the dish to the oven for 10 minutes or until the juices begin to flow.
  11. To serve, pour the blackberries and juice over the apples.
