- 1 tbsp olive oil

- 850 ml hot vegetable broth (we used Kallo broth with a very low salt content)
- a pinch of saffron
- 400g seafood mix (we used a bag of frozen mixed seafood that was thawed before use)
- Juice ½ small lemon
- a small handful of flat-leaf parsley, roughly chopped
Preparation steps

Heat the oil in a large pot and sauté the onion for 6-7 minutes until translucent.

Add pepper and garlic and cook for another 2 minutes.

Stir in the paella rice and cook, stirring, for 1 minute.
