Soft-boiled salad with eggs, bacon and watercress

Ingredients

  • 2 large eggs, room temperature
  • 1 shallot, very finely chopped
  • 1 tbsp red wine vinegar
  • 1 heaped teaspoon whole grain mustard
  • 2 tbsp rapeseed oil
  • Handful of chives, chopped (optional)
  • 4 thick slices of cured, smoked bacon
  • 2 slices of good, white, crusty bread (ideally from sourdough)
  • 2 good handfuls of British watercress, thick stems removed

Preparation steps

  1. Place the eggs in a pot of cold water and bring to the boil.
  2. Cook for 3 minutes, then remove to a bowl of ice water and allow to cool completely.
  3. Peel the peels very carefully.
  4. Leave the eggs in the ice water until you are finished with the recipe, or up to 1 hour in advance.
  5. Mix the shallot with the vinegar and a pinch of salt and set aside for a few minutes to soften.
  6. Stir in mustard, oil and chives if using to make a dressing.
  7. Heat the grill to low-medium and cook the bacon until crispy throughout.
  8. Remove the bacon and then spread the bacon juices and fat on the bread.
  9. Grill the bread for about 1 minute on each side until crispy, then cut into slices and keep warm.
  10. Just before serving, bring the water in the pot back to the boil and add the eggs.
  11. Cook for 1 minute to reheat.
  12. Mix the dressing with the watercress and divide between two plates.
  13. Top with an egg and 2 slices of bacon and put the toast aside.
  14. The yolk will still be runny inside.
