Ingredients

  • 500g Maris Piper potatoes, diced
  • 100g bag of baby spinach
  • Zest and squeeze 1 lemon
  • 140g smoked trout fillet, in flakes
  • 1 tbsp capers
  • 1 tbsp chopped dill
  • 140g breadcrumbs, from stale bread
  • 1 tbsp sunflower oil
  • Lemon wedges and tartar sauce for serving

Don’t feel like eating fish?
Swap the trout flakes for 140g
Add chopped corned beef or pastrami and fold in
the potato and spinach mixture. Add 1 heaped tsp
Dijon or other mild mustard if available.
Follow the recipe given or just serve it on the side

Preparation steps

  1. Boil potatoes in salted water for 15 minutes until tender.
  2. Meanwhile, place the spinach in a large colander in the sink.
  3. Drain the potatoes over the spinach to allow the cooking water to wilt them, then return the potatoes to the pan.
  4. Mash the potatoes, stir in the lemon zest and juice and some spices.
  5. Fold in the trout flakes, squeezed spinach, capers and dill.
  6. Place half of the breadcrumbs on a large plate.
  7. Transfer the potato mixture to another plate and form it into a large disk.
  8. Turn the potato cake onto the breadcrumbs and press the remaining crumbs on top.
  9. Heat the grill and pour the oil into a large skillet.
  10. Gently slide the potato cake into the pan and bake for 5 minutes, until the bottom is golden brown.
  11. Now grill for 4-5 minutes until the crumbs on top are golden brown and the cake is heated through.
  12. Serve hot with lemon wedges, tartar sauce and a green salad.
