  • 12 large raw shrimp
  • ½ tbsp smoked Spanish paprika (sweet or spicy, whichever you prefer)
  • 2 large garlic cloves, finely chopped
  • 1 teaspoon cumin, roasted and ground
  • a few sprigs of oregano, finely chopped leaves or 1-2 tsp dried
  • Juice and zest of a large lemon
  • 2 tbsp olive oil

  2. Meanwhile, peel the shrimp, leaving the tails intact, and devein them.
  3. To do this, run a sharp knife across the back and make a small incision just enough to remove the visible black vein.
