  • 325g can of sweetcorn
  • 1 tbsp vegetable oil
  • 1 onion, coarsely chopped
  • 1 tbsp mild curry powder
  • 1 garlic clove, crushed
  • 1 x 50 packets of coconut cream, chopped
  • 4 frozen smoked haddock fillets
  • cooked rice for serving

Preparation steps

  1. In a blender, puree the sweetcorn with the liquid from the can into a coarse puree and set aside.
  2. Heat the oil in a large frying pan with a lid and fry the onions for 2-3 minutes to soften. Add the curry powder and garlic and cook until fragrant, 1 minute more.
  3. Add the coconut cream to the pan with 300ml water and stir until the coconut cream dissolves. Add the pureed corn and bring to the boil.
  4. Place the haddock fillets in the sauce and then reduce the heat to a simmer. Cover and cook for 20 minutes, or until the fish is cooked through.
  5. Season and serve with rice.
