  • good spray milk
  • 2 eggs
  • 450g pack of ready-made colcannon or other flavored ready-made mashed potatoes
  • a handful of chives, chopped

Preparation steps

  1. Place the haddock fillets in a shallow, microwave-safe bowl and pour the milk over them, halfway up the lid.
  2. Cover the bowl with plastic wrap and microwave for 4-5 minutes, until the haddock flesh flakes easily.
  3. Meanwhile, prepare a pot of water for the eggs.
  4. Crack the eggs into the boiling water and poach until the whites are set but the yolks are still soft, about 1-2 minutes.
  5. Remove the fish from the microwave.
  6. Heat Colcannon in the microwave according to package instructions.
  7. Mix half of the chives into the colcannon.
  8. Divide the colcannon mixture between two plates.
  9. Top the colcannon with the haddock and eggs.
