Ingredients
- 6 boneless, skinless chicken thighs (approx. 500 g)
- 2 tbsp olive oil
- 1 teaspoon fennel seeds, crushed
- 1 tsp ground cumin
- 1 tsp sweet smoked paprika (pimentone)
- 1 garlic clove, crushed
- 1 tsp red wine vinegar
- smoky aïoli for serving (see tips below)
Tip
Smoky aïoli
Mix 8 tbsp mayonnaise,
2 crushed garlic cloves, 1 teaspoon paprika
and a squeeze of lemon juice.
Preparation steps
- You will need 15 skewers: For wooden skewers, soak them in water for 10 minutes.
- Cut chicken into 3cm pieces and place in a bowl.
- Add 1 tablespoon of olive oil, the spices, garlic and vinegar to the bowl.
- Stir well and season. You can do this up to a day in advance and store in the refrigerator.
- Place 2-3 pieces of chicken on each skewer.
- Pour remaining oil into a frying pan or grate onto a grill pan.
- Get the pan hot and brown the chicken for 3-4 minutes on each side – you may need to do this in batches.
- Keep the cooked skewers warm in a low oven.
- Serve with smoky aïoli if desired.
