Ingredients

  • 50g butter
  • 6 digestive biscuits, finely chopped
  • 250g can of ricotta
  • 50g powdered sugar
  • Zest of 1 lemon, juice of ½
  • 1 egg and 1 egg yolk

  • 2 tbsp strawberry jam, melted
  • 3 strawberries, halved

  9. Pour the filling evenly into the paper cases right up to the edge.
  10. Tap the can on the work surface to smooth out the filling.
  11. Bake the cheesecakes for 30 minutes.
  12. Turn off the oven and allow the cheesecakes to cool completely inside.
  13. To decorate, top each cheesecake with 1 teaspoon of jam.
  14. Place half a strawberry on each cheesecake.
