Ingredients
- Butter for greasing
- 1 batch Simple Apple Fruit Cake, uncooked (see link below)
- 2 tbsp apricot jam
- 500g pack of natural marzipan
- 500g pack of ready-to-roll white icing
- 16 fresh cranberries
- Bunch of rosemary, broken into small twigs
- 50g powdered sugar
- 1 egg white
- 50g powdered sugar
- approx. 1 m long gold ribbon
Preparation steps
- Preheat the oven to 180°C/fan 160°C/gas 4.
- Butter eight 150ml ramekins and line the bottom with circles of non-stick baking paper.
- Divide the cake mixture between the ramekins, place on a baking sheet and put in the oven.
- Bake for 30 minutes until springy and dark golden brown.
- Let cool until you can handle it, then run a round knife around the edge of each cake.
- Remove and let cool completely on a rack.
- When the cakes have risen into peaks, flatten them by trimming the tops with a serrated knife.
- Melt the jam with 1 tablespoon of water and spread it on the surface of the cakes.
- Knead the marzipan lightly and form eight golf ball-sized balls. (There will be some leftover – pack it up well for another time.)
- Using a rolling pin, gently roll out the balls into flat circles about 1cm thick and the same diameter as the cakes.
- Place the marzipan on the jam side of the cakes.
- Do the same with the icing and brush the marzipan with a little cooled, boiling water to help it stick.
- Beat the egg whites until just fluffy and broken.
- Spread the powdered sugar on a plate.
- Dip the cranberries and rosemary into the egg whites, shake off the excess and roll in the powdered sugar for a frosty effect.
- Let dry for 15 minutes.
- Discard all but 2 teaspoons of the egg whites and mix them with the powdered sugar until a thick paste forms.
- Use this to attach two cranberries and a sprig of rosemary to the top of each cake.
- Decorate with gold ribbon.
- The cakes will keep in an airtight container for up to a week.
