  • 1 onion, cut into thick slices
  • 10 cloves plus extra for sprinkling
  • 1 medium-sized ham roast, approx. 1.3 kg
  • 1½ liter bottle of ginger beer
  • 1 tbsp English mustard
  • 3 tbsp ginger jam

Preparation steps

  1. Place the onion and 10 cloves in the bottom of the slow cooker.
  2. Place the ham roast on top of the onions and cloves.
  3. Pour ginger beer over the ham.
  4. Cover slow cooker and cook on LOW for 7 hours.
  5. Check that the ham is tender but still holds its shape. If not, cook some more.
  6. If desired, cool the ham at this time.
  7. Preheat the oven to 200°C/180°C fan/gas 6.
  8. Remove the skin from the ham, leaving a layer of fat.
  9. Score the fat in a diamond shape, being careful not to cut into the meat.
  10. Insert a clove into the center of each diamond.
  11. Mix mustard and ginger jam in a bowl.
  12. Spoon or brush the mustard-ginger mixture over the ham.
  13. Bake the ham for 20 minutes until golden brown and sticky.
  14. If frying cold, add another 20 minutes to the cooking time.
