Ingredients
- half a leg of lamb (approx. 1¼kg/2lb 12oz)
- 1 kg onions (approx. 4 large ones)
- a handful of thyme sprigs
- 300 ml red wine
- large handful of parsley
Preparation steps
- Preheat the oven to 160°C/fan 140°C/gas 3.
- Wipe the lamb all over and season well.
- Heat 3 tablespoons olive oil in a large, heavy, ovenproof casserole dish.
- Add the meat and fry on all sides over a fairly high heat for about 8 minutes, turning as you go, until well browned.
- Place the meat on a plate.
- Cut the onions into thin slices.
- Add the onions to the pan and fry until soft and brown, about 10 minutes.
- Add a few sprigs of thyme and cook for another minute or so.
- Season the onions with salt and pepper.
- Place the lamb on top of the onions.
- Add the wine.
- Cover the casserole tightly.
- Bake for 3 hours.
- If you prefer, you can prepare this step up to 2 days in advance and then reheat for 45 minutes.
- Strip the leaves from 2 thyme sprigs and chop them together with the parsley.
- Sprinkle the herb mixture over the lamb before serving.
