  6. Dust the surface with powdered sugar.

  20. Lift the rolling pin and place the marzipan on the cake.
  21. Stop when the edge of the marzipan closest to you is about level with the bottom of the cake.
  22. Fold the front of the marzipan down.

  24. Cut the marzipan with a sharp knife.
  25. If cracks appear, squeeze the paste back together and smooth it out.
  26. Allow the cake to dry for at least 24 hours or up to 3 days before covering it with frosting.

How long does homemade marzipan last?

Although homemade marzipan contains raw eggs, the amount of sugar and lack of moisture prevent bacteria from growing when stored at room temperature. This means your cake should last 1-2 months when frozen. The most important thing is that the marzipan is completely dry before covering it with the glaze. If you want to make marzipan in advance, wrap it tightly in plastic wrap and store it in the refrigerator for up to a week. Because it contains raw eggs, it should not be given to anyone from a risk group, including pregnant women, the elderly, the sick and young children. Alternatively, you can make cooked marzipan as a safer substitute, although it may be a little softer and more difficult to work with.
