  • 85g leftover cooked chicken, shredded
  • a handful of mixed vegetables (try bean sprouts, sweetcorn, carrot slices and snow peas)
  • 150g pack of noodles directly for the wok (or use 85g dried, cooked noodles according to package instructions)
  • 2 spring onions, sliced, for serving
  • Juice 1 lime

Preparation steps

  1. Place broth, ginger, garlic, soy sauce and sugar in a saucepan and heat.
  2. Let simmer for 5 minutes.
  3. Remove from heat, pour into a microwave-safe bowl and allow to cool.
  4. Add chicken and vegetables, cover and refrigerate for up to a day.
