  • 300g dried mixed fruits
  • 200g apricot jam
  • 25 ml brandy
  • 200g plain flour
  • 100g butter, cut into cubes
  • 1 egg yolk
  • 100g plain flour
  • 25g powdered sugar, plus a little sugar for dusting
  • 50g butter, cut into cubes
  • 50g whole almonds, roughly chopped

Preparation steps

  1. Place the dried fruit and jam in a small saucepan, heat until melted, then stir in the brandy and allow to cool. Preheat oven to 200°C/180°C fan/gas 6.
  2. For the dough, set aside 2 tablespoons of flour and put the rest into a food processor along with the butter. Stir until there are no lumps of butter left. Add the egg yolks, then add water a tablespoon at a time until the dough comes together. You will probably need 2 tablespoons. (If you don’t have a food processor, rub the flour with butter using your fingers, then stir in the egg yolks and water with a round-bladed knife.) Roll out the dough with the reserved flour until slightly thicker a £1 coin. Punch out circles with an 8cm cutter and press them into the holes of a bun tin. By re-rolling the scraps you should get 15 circles.
  3. Divide the fruit among the cakes, then bake for 5 minutes while rubbing all the streusel ingredients together with your fingers.
  4. Top each cake with sprinkles, then return to the oven for 15 minutes, until the batter and sprinkles are golden brown. Eat warm or cold dusted with powdered sugar.
