Preparation steps
- Place peas and bread in a large heatproof bowl
- Pour the broth over it and let it steep for 2 minutes
- Carefully pour the mixture into a blender
- Season well
- Add cucumber, garlic, avocado, vinegar, chili and most of the scallions, tomatoes and parsley
- Stir everything until smooth
- Season to taste
- Chill for about 30 minutes
- Divide the gazpacho into bowls
- Drizzle the olive oil over it
- Scatter the remaining spring onions, tomatoes and parsley on top
- Serve with crusty bread
