- 325g can sweetcorn, drained
- 6 tbsp crème fraîche
- a handful of parsley or basil leaves, chopped
- 750g potatoes, cut into pieces

Onion with 1 chopped red pepper,
½ chopped butternut squash, 1 finely chopped
chopped red chili and 1 tsp ground
Stir cumin for 5 mins through a 400g tin
tomatoes and corn; Simmer
15 minutes. Add chopped coriander on top
with porridge, then cook as above.
Preparation steps
- Heat the grill.
- Fry onions and chicken in oil for 5-10 minutes, until onion is soft and chicken is golden brown.
- Pour over the broth, bring to the boil and then simmer for 20 minutes until the chicken is cooked through.
- Stir in the corn, then 3 tablespoons of crème fraîche and the herbs.
- In the meantime, cook the potatoes until soft.
- Drain and mash with the remaining crème fraîche.
- Divide the chicken mixture into 4 cake pans and top with the puree.
- Place on a baking sheet and grill until the potato is golden brown.
