Ingredients

  • 225 ml bag of baby spinach leaves
  • 6 large eggs
  • 425 ml milk
  • 1 tbsp English mustard powder
  • 200g bread (approx. 3 thick slices)
  • 200 g mature vegetarian cheddar
  • 4 bunches of cherry tomatoes on a stem

Preparation steps

  1. Preheat the oven to 190°C/gas 5/fan 170°C.
  2. Butter a shallow 2 liter dish.
  3. Place the spinach in a colander in the sink.
  4. Pour a kettle full of boiling water over the spinach.
  5. Let the spinach wilt while you prepare the cheese base.

  7. Beat the eggs into the bowl of a stand mixer.
  8. Pour in milk.

  13. Squeeze the spinach to remove all the water.
  14. Stir the spinach into the cheese mixture.
  15. Pour the spinach and cheese mixture into the buttered baking dish.
  16. Grate the remaining cheese over it.
  17. Place the tomato bunches on top.
  18. Bake for 30-35 minutes until risen and golden brown.
  19. Allow to cool and allow the dish to rest for a while before serving.
