Ingredients

  • 4-5 tbsp olive oil
  • 1 medium red onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 small dried red chili, chopped
  • a handful of oregano or marjoram, roughly chopped
  • 2 medium eggplants, cut into 2½ cm cubes
  • 50g raisins
  • 4 large tomatoes, chopped
  • 2 tsp tomato paste
  • 2 tablespoons baby capers, rinsed, drained and roughly chopped
  • 2-3 tbsp high quality red wine vinegar
  • 400g fusilli
  • small handful of mint, roughly chopped
  • 50g pine nuts, roasted
  • for serving, aged ricotta or vegetarian parmesan cheese (try Bookham’s “Not Just a Pasta Cheese”)

Preparation steps

  1. In a heavy-based pan, heat half a tablespoon of oil and gently fry the onion, garlic and chilli with half the oregano until soft.
  2. In the meantime, heat 3-4 tablespoons of oil in another pan and fry the aubergines in it. Once cooked, add to onion mixture.
  3. Fry the raisins in another half a tablespoon of oil and, when they have risen, add them to the eggplant mixture.
  4. Add tomatoes, puree and remaining oregano. Cook over medium heat for 15-20 minutes to allow all the flavors to develop.
  5. Finally add the capers and vinegar and cook the pasta in plenty of boiling salted water over low heat.
  6. If the mixture becomes very thick, add 100 ml of water.
  7. Toss the pasta in the eggplant sauce and sprinkle with fresh mint and pine nuts.
  8. Let everyone grate their own cheese on top.
