  • 1.2l vegetable broth
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 large garlic clove, finely chopped
  • 1 small fennel bulb, deseeded and finely chopped
  • 300g risotto rice
  • 300 g peeled raw king prawns
  • 1 lemon, ½ grated zest and 1 tbsp juice
  • 70g bag of rocket

Preparation steps

  1. Pour the broth into a large pot, bring to the boil and then simmer over a low heat.
  2. Meanwhile, heat the oil in a large pot.
  3. Add the onion, garlic and fennel and cook over low heat for 10 minutes, until the vegetables are soft but not colored.
  4. Add the rice and stir for 2 minutes until the grains are hot and make crackling sounds.
  5. Increase the heat to medium and begin adding the broth, one ladle at a time, stirring constantly and making sure the broth is absorbed into the rice before adding the next ladle.
  6. When the rice is almost cooked, add shrimp, lemon zest and some spice.
  7. Continue adding broth and cooking until shrimp are pink and rice is cooked through, 3-4 minutes more.
  8. Remove from heat and stir in arugula and lemon juice.
  9. Check the seasoning, let the risotto rest in the pan for 2 minutes, then serve.
