  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 4 celery stalks, cut into pieces
  • 2 cloves of garlic, minced
  • 2 anchovy fillets, chopped
  • a pinch of chili flakes
  • 400 g canned chopped tomatoes
  • 250 ml white wine
  • 200 ml vegetable broth
  • 400 g raw king prawns, peeled
  • Zest and squeeze 1 lemon
  • 1 teaspoon salted baby capers, rinsed
  • large handful of parsley, chopped
  • toasted bread for serving

  8. Cook for another 5 minutes, or until the shrimp turn pink and are just cooked through.
  9. Mix the parsley and lemon zest and sprinkle over the stew.
  10. Serve with toasted bread for dipping.
