Ingredients

  • 1 clove of garlic
  • a handful of coriander stems or roots
  • 1 tsp golden powdered sugar
  • 1 red chili, deseeded, plus 1 teaspoon chopped for garnish
  • 2 cm piece of ginger root, peeled and roughly chopped
  • Juice of 3 limes and 1½ oranges
  • 1 small watermelon weighing about 1.8 kg
  • 24 large cooked and peeled king prawns
  • 4 spring onions, finely chopped
  • 2 stalks lemongrass, finely chopped
  • 4 cm ginger root, peeled, cut into fine sticks
  • Zest of 1 lime
  • 3 lime leaves, crushed (optional)
  • a handful each of coriander and mint leaves, chopped
  • 100 g roasted, salted peanuts or cashews for garnish

Preparation steps

  1. Three hours before serving: Prepare the dressing. Put the garlic and coriander in a food processor with 1 teaspoon of salt and sugar and process into a paste. Add chili, ginger and citrus juices and puree until smooth. Cover and chill.
  2. Two hours before serving: Cut the watermelon into pieces, remove the rind and remove the seeds. Cut into approx. 3 cm wide pastilles.
  3. Mix melon and shrimp and add spring onions, lemongrass, ginger, lime zest and lime leaves. Cool.
  4. To serve: Mix the dressing and herbs into the salad and sprinkle with chili and peanuts.
