Ingredients

  • 140g plain flour
  • 1 teaspoon Baking powder
  • 2 eggs
  • 125 ml milk
  • 2 tbsp yellow or red Thai curry paste
  • 140 g frozen corn kernels, thawed
  • small bunch of spring onions, chopped
  • small bunch of coriander leaves, chopped
  • 140 g raw, peeled king prawns, chopped
  • Vegetable oil, for frying
  • sweet chili sauce for serving

Preparation steps

  1. Place flour, baking powder and ½ teaspoon salt in a bowl or jug.
  2. Stir in eggs and milk until a thick, smooth batter forms.
  3. Stir the curry paste into the batter and stir until well combined.
  4. Place the corn, scallions, cilantro, and shrimp in another larger bowl.
  5. Pour the dough onto the sweetcorn, mix and fold in.
  6. Heat a few tablespoons of oil in a large nonstick skillet until hot.
  7. Cook large spoonfuls of the batter at a time (in batches) for about 2 minutes on each side, or until golden brown and cooked through.
  8. You will bake about 8-10 doughnuts.
  9. While you cook the rest, keep warm in the oven on low heat.
  10. Serve with sweet chili sauce.
