Ingredients
- 300 g butter, soft
- 140g golden powdered sugar, plus 4 tbsp
- 300g plain flour
- 140g rice flour
Preparation steps
- Put the butter and 140 g sugar in a food processor and mix until smooth.
- Add both types of flour and a pinch of salt and mix everything until a homogeneous mass is formed.
- Using your hands, spread the mixture roughly onto a 20 x 30 x 4 cm baking tray.
- Cover with cling film and smooth out until there are no more wrinkles.
- Refrigerate uncooked for at least 30 minutes and up to 2 days.
- Preheat the oven to 180°C/160°C fan/gas 4.
- Remove the cling film and lightly mark the shortcrust pastry all around with a fork.
- Sprinkle with the remaining sugar.
- Bake for 20-25 minutes.
- Allow to cool in the tin.
- Cut into 24 thin slices.
- Shortbread will keep in an airtight container for up to 1 week.
