  • 300 g butter, soft
  • 140g golden powdered sugar, plus 4 tbsp
  • 300g plain flour
  • 140g rice flour

Preparation steps

  1. Put the butter and 140 g sugar in a food processor and mix until smooth.
  2. Add both types of flour and a pinch of salt and mix everything until a homogeneous mass is formed.
  3. Using your hands, spread the mixture roughly onto a 20 x 30 x 4 cm baking tray.
  4. Cover with cling film and smooth out until there are no more wrinkles.
  5. Refrigerate uncooked for at least 30 minutes and up to 2 days.
  6. Preheat the oven to 180°C/160°C fan/gas 4.
  7. Remove the cling film and lightly mark the shortcrust pastry all around with a fork.
  8. Sprinkle with the remaining sugar.
  9. Bake for 20-25 minutes.
  10. Allow to cool in the tin.
  11. Cut into 24 thin slices.
  12. Shortbread will keep in an airtight container for up to 1 week.
