  • 500g strong white bread flour
  • 7 g packet of Easy-Bake dry yeast (or 2 tsp quick dry yeast)
  • 1½ tsp salt
  • 1 tbsp softened butter
  • 1 tbsp sunflower seeds
  • 1 tbsp each sesame and poppy seeds, plus some for sprinkling

Preparation steps

  1. Mix flour, yeast and salt in a large mixing bowl.
  2. Add the butter and rub it into the flour.
  3. Mix in the seeds.
  4. Dip into the center of the flour and, using a round knife, pour in almost 300 ml of lukewarm water.
  5. Mix in enough remaining water, and a little more if necessary, until the mixture forms a soft, not too sticky dough.
  6. Form the dough into a ball with your hands.
  7. Transfer the dough to a lightly floured surface and knead for 8-10 minutes until it feels smooth and elastic.
  8. Add as little flour as necessary to keep the dough from sticking.
  9. Place the dough ball on a lightly floured work surface and cover with an inverted, clean, large glass bowl.
  10. Let rest 45 minutes to 1 hour or until doubled in volume and feels light and springy.
  11. Punch down the dough by gently kneading it a few times to remove any large air bubbles.
  12. Form the dough into a ball and let it rest, covered, for 10 minutes.
  13. Using your knuckles, flatten the dough into a rectangle about 25 x 19 cm.
  14. Fold both shorter ends in half like an envelope, make a quarter turn, then flatten back to the same size and roll up tightly.
  15. Seal both ends by pressing firmly with the palm of your hand.
  16. Place the loaf, seam side down, on a baking sheet lined with parchment paper.
  17. Using a very sharp knife, make 7-8 diagonal cuts along the length of the loaf, deep enough to open slightly.
  18. Cover and let rest for 40-45 minutes, or until approximately doubled in size.
  19. Finally, brush the cuts with water between cuts and then sprinkle alternate rows of seeds.
  20. 20 minutes before baking, place a roasting tin in the bottom of the oven and preheat the oven to 230°C/210°C fan/Gas 8.
  21. Place the risen bread in the oven and carefully pour about 250ml of cold water into the roasting tin.
  22. Reduce the heat to 220°C/200°C fan/gas mark 7 and bake for 30-35 minutes or until golden brown.
  23. Remove from the oven and let cool on a wire rack.
  24. When you tap the bottom of the bread it should sound hollow.
