- 2 splashes of olive oil
- 1 red onion, halved and cut lengthwise into narrow wedges
- 2 spring onions, thinly sliced diagonally
- 2 small fennel bulbs (or 1 small regular one), cut diagonally into thin slices
- a nugget of fresh ginger root, peeled and cut into very thin slices
- 1 stalk of lemongrass, cut diagonally into thin slices
- 2 star anise
- a small handful of fresh coriander, roughly chopped
- 1 garlic clove, finely chopped
- 600g bag of mussels, scrubbed
- 140g peeled raw tiger prawns, thawed if frozen
- about 100 ml/3½ fl oz white wine
- about 3-4 tbsp coconut milk
- two 30 x 42 cm sheets of non-stick baking paper (approx. A3 format) and a string
- Preheat the oven to 220°C/gas 7/fan 200°C.
- Heat a drizzle of oil in a large pot.
- Add the onion, spring onions, fennel, ginger, lemongrass, star anise and coriander to the pot.
- Toss the vegetables and spices over high heat for a few minutes until softened.
- Add the garlic and season to taste.
- Add the clams and shrimp to the pot and add enough wine to moisten the clams without drowning them.
- Cover the pot and cook for 30 seconds to 1 minute.
- Remove from heat and check to see if the mussels are open.
- If the clams don’t open, place the pan back on the heat for a few seconds until they open.
- Using a slotted spoon, transfer the mussels and vegetables to a bowl, leaving the juices in the pan.
- Pour the coconut milk into the pan, using the same amount as the liquid already present.
- Cook the coconut milk until it forms a thick, syrupy mixture, about 4 minutes.
- Add the mussels and vegetables back to the pan and drizzle with a little oil.
- Shake to mix everything together.
- Take a sheet of non-stick baking paper and place it in a deep medium saucepan.
- Add half of the mussels and vegetables and one star anise.
- Lift out the paper and twist the top to create a wallet.
- Tie the bag with a string and make another bag.
- Place the bags in a large baking dish or roasting pan.
- Bake briefly in the oven for 3-4 minutes until the top of the paper begins to burn.
- Remove the bags and place them individually on a plate.
- Untie the bags and open them at the table.
