  • flour, for dusting
  • 1 egg, beaten with a good pinch of salt
  • 3 tbsp finely grated Parmesan
  • 7 cherry tomatoes, halved
  • 200g purchased hummus
  • some chives
  • 200g soft cheese
  • 85g smoked salmon
  • Dill sprigs
  • small capers, optional

  14. The tomatoes will keep for 24 hours in the refrigerator.
  15. To serve, fill some of the ramekins with a teaspoon of hummus, a cherry tomato and a few chopped chives.
  16. Fill others with soft cheese, a twist of salmon, dill, black pepper and capers if desired.
