- 450g sausage meat
- 50g fresh white breadcrumbs
- 1 teaspoon thyme or rosemary leaves, chopped
- 1 tbsp olive oil
- 500g cardboard passata
- 2 tbsp dried tomato paste
- 300g fusilli or other pasta shapes
- ½ small savoy cabbage, cut into 1 cm wide slices
- 250 g ball mozzarella, diced
- 2 tbsp freshly grated Parmesan
Preparation steps
- Place the sausage meat, breadcrumbs and thyme or rosemary in a bowl and mix. Form 20 small balls.
- Heat the oil in a wide pan and fry the sausage balls for 10 minutes until they are nicely browned. Add the passata and tomato paste, cover and simmer gently for 20 minutes.
- Meanwhile, cook the pasta according to package instructions, adding the cabbage for the last 5 minutes of cooking time. Drain the cabbage and pasta, mix with the sauce and place in a heatproof bowl.
- Preheat the oven to 200°C/180°C fan/gas. 6. Slide the mozzarella cubes on top of the pasta. Sprinkle with Parmesan cheese and bake for 15-20 minutes until bubbly and crispy.
