Ingredients

  • 12 good quality sausages
  • 250g thick or medium egg noodles
  • 4 tbsp soy sauce
  • 2 tbsp clear honey
  • Squeeze 1 large orange
  • 2 tbsp peanut or vegetable oil
  • 2 garlic cloves, crushed
  • finger-length piece of fresh ginger root, peeled and finely chopped
  • 2 red chili peppers, deseeded and finely chopped
  • 4 large carrots, cut into sticks
  • 2 red peppers, deseeded and thinly sliced
  • 1 yellow pepper, deseeded and thinly sliced
  • 200g pack of sugar snap peas
  • 1 bunch of spring onions, grated lengthwise
  • 2 tbsp sesame seeds, toasted

Preparation steps

  1. Preheat the oven to 200°C/fan 180°C/gas 6.
  2. Remove the sausage meat from the shell and place it in a large bowl.
  3. Using your hands, roll the sausage meat into meatballs. Aim to make about three meatballs from each sausage.
  4. Place the meatballs on a roasting tray and cook in the oven for 10-12 minutes, until golden brown and fully cooked. You can make the meatballs up to a day in advance. If you do this, simply heat them in the oven for 5 minutes before serving to ensure they are piping hot.
  5. Cook the pasta according to package instructions.
  6. In a small bowl, combine soy sauce, honey and orange juice. If you want to make the pasta in advance, cook it, cool it under cold water, drain it, toss it with a little oil, then set it aside until needed.
  7. Heat a large wok or non-stick frying pan and add the oil.
  8. Add the garlic, ginger and chilli to the wok or pan and fry for 1 minute.
  9. Add the carrot and pepper to the wok or skillet and sauté for 3 minutes.
  10. Add the snow peas and scallions to the wok or skillet and cook for another minute.
  11. Drain the cooked noodles and add them to the wok or pan with the vegetables.
  12. Add the soy sauce mixture and mix well.
  13. Season with salt and pepper.
  14. Before serving, sprinkle the sesame seeds over the pan.
  15. Serve the stir-fry in warm bowls and top with the sausage balls.
