  • 1kg potato, cut into even pieces
  • 25g butter
  • 4 tablespoons of milk
  • 85g Red Leicester or Cheddar, finely diced
  • 1 tbsp sunflower oil
  • 1 large onion, chopped
  • 8 large, meaty pork and leek sausages, removed from the shell
  • 175 ml chicken stock
  • 2 tomatoes, each cut into 6 wedges
  • Vegetables of your choice or baked beans to serve

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Boil the potatoes for 20 minutes, then drain and mash them with butter, milk and spices.
  3. Stir in the Red Leicester or Cheddar.
  4. Meanwhile, heat the oil in a non-stick pan and fry the onions, stirring frequently, until soft, 5 minutes.
  5. Add the sausages and break them up with a wooden spoon until they have a consistency similar to coarse ground meat.
  6. Pour in the broth and simmer for 8 minutes.
  7. Divide the sausage mixture into 4 individual cake pans.
  8. Top with the cheese pulp.
  9. You can freeze the cakes for up to 2 months. Simply thaw in the refrigerator before baking.
  10. Bake for 25-30 minutes until starting to turn golden brown.
  11. Top with the tomato wedges.
