Ingredients
- 4 skinless, boneless chicken breast fillets
- 3 tbsp soy sauce
- 1 heaped tablespoon of Very Lazy Chilies
- 2 garlic cloves, crushed
- 1 tbsp vegetable oil
- 1 heaped tablespoon of light muscovado sugar
- 1 lime, halved
- 415 g jar of ready-made satay sauce
- 12 lime slices

Very rotten chilies
The English Provender Company’s excellent Very Lazy Chillies can be found in good supermarkets and delicatessens. They’re a no-fuss alternative to fresh chilies, so it’s handy to have a jar in the fridge. If you can’t get it, just use chili sauce or chili paste instead.
Preparation steps

- Cut the chicken breasts into 36 thin strips up to a day in advance.
- Place the chicken strips in a bowl.
- Add soy sauce, chili sauce, garlic, oil and sugar to the bowl.
- Mix all ingredients until chicken is coated.
- Thread each chicken strip onto a bamboo skewer.
- Arrange the skewers on a baking sheet.
- Cover the tray and store in the fridge until ready to cook.
- Preheat the oven to 190°C/gas 5/fan 170°C.
- Place the tray with the skewers in the hottest part of the oven for 10 minutes.
- Heat the satay sauce in a pan.
- Pour some satay sauce into each of 12 shot glasses or small cups.
- Once the chicken is cooked, remove the tray from the oven.
- Squeeze lime juice over the chicken.
- Insert 3 skewers into each shot glass.
- Place a lime wedge on the rim of each shot glass.
- Serve the satay shots warm or cold.
