- 100g butter, melted
- 14 filo pastry sheets
- 500g bag of mixed dried fruits
- 140g dried berries (including cranberries and cherries)
- 1 heaped teaspoon brown sugar
- 1 tsp cinnamon
- 1 tsp spice mix
- 2 tbsp clear honey
- Zest 1 lemon
- 2 tbsp clear honey
- Preheat the oven to 200°C/fan 180°C/gas mark 6 and grease an 18 x 28cm baking tray with melted butter.
- Spread melted butter on a sheet of filo dough and place it on the tray, butter side up. Repeat with four more sheets, brushing each layer with melted butter.
- In a large bowl, mix together all the dried fruit, brown sugar, spices and honey.
- Place a third of the filling in an even layer on the baking sheet.
- Cover with 3 buttered filo pastry sheets.
- Continue until you have three layers of fruit, which you will pickle and top with three sheets of buttered phyllo dough.
- Brush the top with melted butter and then use a sharp knife to carefully cut into diamond shapes.
- Sprinkle with a little water (to prevent the corners from curling) and bake for 30 minutes until golden brown.
- Heat the peel, honey and 2 tablespoons of water in a pan and pour over the still warm dough.
- Allow to cool in the tray before removing the pieces and placing them on a plate to serve.
