Ingredients
- 18-23cm fruit cake with marzipan coating and ready-to-roll white icing
- 250 g ready-to-roll white icing (see “try” tip)
- pink, green and orange food coloring (or use colors of your choice)
- 1 amount of soft royal icing (see “try” tip)
- thin red ribbon
- orange, green and pink Smarties, plus 3 small gift boxes
Tip
With ready-to-roll white glaze
Lightly brush the surface of the cake with cooled boiled water. Dust a surface with icing sugar and knead 750g of roll-ready white icing until soft and smooth. Roll out the cake into a round shape and use the rolling pin to spread the icing over the cake. Run the icing over the edges of the cake, then smooth the surface with your palms. Cut off the excess with a sharp knife.
For the sugar glaze, place 1 egg white in a large bowl, sift in 200 g powdered sugar and stir until smooth.
Preparation steps
- Knead the ready-to-roll icing until smooth.
- Divide the icing into three equal pieces.
- Color each piece of frosting the color you want.
- Roll out each piece of icing to about ½ cm thick.
- Using a stencil, cut eight stocking shapes from the rolled icing.
- Set the stocking forms aside.
- Make the royal icing and color it as before.
- Using the tip of a skewer or a piping bag, add small “dots” to the stocking shapes.
- Set the stocking forms aside to dry.
- Store the colored icing covered with cling film until later.
- Secure the ribbon around the top edge of the cake.
- Apply a thin line of frosting to help the ribbon stick to the cake.
- Take some leftover colored icing and use it to “hang” the stockings on the cake.
- Place the stockings directly under the band and alternate colors.
- Cover the cake with Smartie-filled boxes.
- Scatter Smarties over the cake and cake board.

The health benefits of Santa stocking cake
Not only is St. Nicholas Stocking Cake a delicious treat during the festive season, but it also comes with several health benefits. Packed with nutritious ingredients and carefully prepared, this cake can be a guilt-free treat. Let’s explore the health benefits of some of the key ingredients used in this delicious dessert.
1. Fruit Cake – The base of the Christmas Stocking Cake is a fruit cake covered in marzipan and rolled white icing. Fruit cakes are known to be high in fiber as they contain dried fruits such as raisins, currants and mixed peels. Fiber aids in digestion, helps maintain regular bowel movements, and can help with weight control.
2. Marzipan – Marzipan is a sweet almond paste that adds a layer of flavor to the cake. Almonds, the main ingredient in marzipan, are a nutritional powerhouse. They are rich in healthy fats, proteins, fiber, vitamin E, magnesium and potassium. Almonds have been linked to various health benefits including heart health, blood sugar control and weight management.
3. Finished White Icing – While white icing adds a festive touch to the cake, its high sugar content means it is important to consume it in moderation. However, using ready-made white icing allows you to control the amount used, ensuring balanced intake.
4. Smarties – The cake is decorated with colorful Smarties, which are small candies covered in chocolate. In moderation, small amounts of dark chocolate can be beneficial to your health. Dark chocolate contains antioxidants that can help reduce inflammation, improve heart health and increase brain function. It is important to remember that moderation is key as excessive chocolate consumption can have negative health effects due to its high sugar and calorie content.
5. Royal Icing – The finishing touch to the Christmas stocking cake is the soft royal icing. Made with egg whites and powdered sugar, royal icing is a simple but delicious addition. Although it adds sweetness to the cake, it is recommended to be consumed sparingly due to its high sugar content.
Not only is St. Nicholas Stocking Cake a delight for the taste buds, but it can also be enjoyed knowing that it contains ingredients that can be beneficial to your health. As with all indulgences, remember to enjoy this delicious dessert in moderation. Happy holidays and have fun with this delicious cake!
