- Slices of grain bread (or a bread of your choice – we used German-style pumpernickel)
- ½ x 8 oz can of wild Alaskan Pacific salmon, drained and flaked
- 1-2 spring onions, thinly sliced
- 2 tbsp cottage cheese
- 1 tsp grated horseradish (optional)
- 1 tbsp coarsely grated Red Leicester cheese
- 40 g watercress and spinach salad to serve
- Heat the grill to the highest level.
- Lightly toast the bread on both sides.
- Mix salmon and spring onions and season only with pepper.
- Spread the salmon mixture on the bread.
- Mix cottage cheese, horseradish (if using) and cheese.
- Pour the cheese mixture onto the salmon.
- Grill on a high rack for 1 minute.
- Lower the rack and grill for another 3-4 minutes or until the topping begins to brown.
