  • 5 large salmon fillets, scaled and skinned, about 200g each
  • 5 tsp Dijon mustard
  • 5 tbsp yellow mustard seeds
  • 5 tbsp light olive oil
  • 3 x 250 packs of cooked beetroot (not in vinegar)
  • 1 tbsp white wine vinegar
  • Stocks of 1 large dill
  • 100g bag of wild rocket
  • 2 x 5 ounce pots of sour cream for serving
  • 1 teaspoon whole grain or Dijon mustard for serving

Preparation steps

  1. Score the skin of each fillet a few times and then season all over.
  2. Spread mustard on the skin side.
  3. Place the mustard seeds on a plate and press the salmon into it, skin side down.

  5. Heat 2 tablespoons oil in a heavy skillet and fry the salmon, crust side down, for 5 minutes or until the skin and crust are crisp and golden brown.

  7. Allow the cooked salmon to cool, then store loosely covered in the refrigerator for up to a day.
  8. Cut the radishes into thin slices.
  9. Cut the beetroot into wedges.
  10. Mix 3 tablespoons of oil with vinegar and spices to make a dressing.
  11. To serve, chop dill and stir into the dressing.
  12. Mix the dressing with radishes, beetroot and rocket and arrange on a platter.
  13. Place the cooked salmon on the beetroot.
