Ingredients
- Saffron, generous pinch
- 6 tbsp warm water
- 2 tbsp olive oil
- 4 boneless, skinless chicken breasts (approx. 600g total weight), each cut into pieces
- 2 sprigs of thyme
- 2 medium onions, sliced
- 3 large cloves of garlic, finely chopped
- Juice of 1 lime
- 1 red pepper, deseeded and cut into strips
- 100 ml dry white wine
- 125 ml light chicken broth
- 250g basmati rice
- 100g frozen peas (or fresh, cooked)
Preparation steps
- Place the saffron in a small bowl and pour warm water over it.
- Press the strands with the back of a teaspoon to set the color and set aside while you prepare the rest.
- Heat the olive oil in a large, heavy casserole dish and when hot add the chicken.
- Cook over high heat for a minute or two, stirring to seal in the juices, then set aside.
- Strip the leaves from the thyme sprigs and sprinkle them into the pan along with the onions and garlic.
- Fry until golden brown and then add the lime juice.
- Reduce the heat slightly, add the pepper and continue cooking for another 5 minutes before adding the wine, stock and spices.
- Return the chicken to the pan and simmer for 6 minutes, until the meat is tender and the liquid has reduced slightly.
- Meanwhile, cook the rice in a pot of rapidly boiling water until tender but slightly chewy.
- Drain in a colander and rinse with warm water.
- Pile over the chicken while it is still hot.
- Drizzle with the saffron and its soaking liquid and sprinkle over the peas.
- Don’t stir the chicken and rice at this point, instead cover and cook over low to moderate heat until the rice is fluffy and the liquid is reduced to a few tablespoons – about 3 minutes.
- Before serving, gently mix the saffron rice with the chicken and pepper mixture.
