  • 8 chicken thighs, with skin on
  • Zest and squeeze 2 large lemons, plus additional wedges for serving
  • 2 tbsp olive oil
  • small bunch of thyme, leaves picked off
  • 4 garlic cloves, minced
  • 100g crème fraîche
  • small packet of coriander, finely chopped
  • Pinch of saffron soaked in 1 tbsp warm water
  • 2 tbsp clear honey
  • 50g pistachios, roughly chopped

Preparation steps


  1. Make two cuts in the skin of each chicken leg and place them in a non-metal bowl.
  2. Mix lemon zest, 4 tablespoons lemon juice, olive oil, thyme and garlic and pour over the chicken.
  3. Cover and chill for at least 1 hour.
  4. Preheat oven to 200°C/180°C fan/gas 6.
  5. Remove the chicken from the marinade, pat dry and season.
  6. Heat a large non-stick frying pan to medium heat, add the chicken, skin side down, and fry until golden brown, 3-4 minutes.
  7. Lift the thighs, skin side up, into a roasting tin and bake in the oven for 20 minutes.
  8. In the meantime, mix together the crème fraîche, coriander, 1 tablespoon of lemon juice and spices.
  9. Mix 1 tbsp lemon juice, the saffron with its soaking liquid, honey and pistachios, then spoon over the chicken and bake for another 5-10 minutes.
  10. Serve the chicken with the dip and additional lemon wedges.

  4. Preheat the grill to medium-high heat. Remove the chicken thighs from the marinade and place them on the grill, skin side down. Cook for 8-10 minutes, then flip and cook for another 8-10 minutes or until the internal temperature reaches 165°F (74°C).
  5. Place the cooked chicken thighs on a serving plate and top with the coriander dip. Sprinkle with chopped pistachios and serve with additional lemon wedges on the side.
