Ingredients

  • 4 large field mushrooms
  • 4 tbsp olive oil
  • 1 garlic clove, minced
  • about 400 g spinach leaves
  • a pinch of flour
  • 1 tbsp picked thyme leaves
  • 500 g block puff pastry made from pure butter
  • 140g Stilton, sliced
  • 1 egg, beaten

Preparation steps

  1. Preheat the oven to 220°C/200°C fan/gas 7.
  2. Remove the stems from the mushrooms.
  3. Heat half the oil in a large frying pan and fry the mushrooms for 3-4 minutes on each side until golden brown and cooked through. Add more oil if necessary.
  4. Remove the mushrooms to paper towels to drain.
  5. Place the same pan back on the stove with the remaining oil.
  6. Fry the garlic briefly, then add the spinach to the pan.
  7. Cook the spinach over high heat for 2-3 minutes until completely wilted.
  8. Season the spinach with salt and pepper.
  9. Place the spinach in a large sieve and drain well.
  10. On a lightly floured surface sprinkled with thyme leaves, roll out the dough to the thickness of a £1 coin.
  11. Using a saucer and a larger plate, cut out four circles about 5cm wider than the mushrooms (for the bottom) and 4 circles about 10cm wider (for the top).
  12. Re-roll the scraps if necessary.
  13. Place the 4 smaller circles on a baking sheet and top each with a quarter of the spinach. Make sure the pile of spinach is not wider than the mushrooms.
  14. Top the spinach with a slice of cheese, then place a mushroom, smooth side up, and another slice of cheese on top.
  15. Brush the edge of each circle with egg.
  16. Gently drag the larger circle over the mushroom, being careful not to trap any air. Then press the edges together with a fork.
  17. Trim the edges with a knife if necessary.
  18. Brush each rubber boot generously with egg.
  19. Bake for 40 minutes until golden brown.
  20. Allow the wellies to cool for a few minutes before serving.
