Ingredients

  • 1½ kg smoked bacon neck roast, soak overnight if necessary (see tip)
  • 1 small packet of rosemary, leaves picked and very finely chopped
  • 1 onion
  • 20 cloves
  • 4 bay leaves
  • 1 carrot, halved
  • 2 celery sticks, halved
  • 1 garlic bulb, halved through the equator
  • 1 tbsp black peppercorns
  • For the sauce 50g butter
  • 25g plain flour
  • 300 ml bacon stock (use the cooking liquid from the bacon collar)
  • 6 tbsp chopped parsley

This cut of pork shoulder is a cheap cut, making premium meat truly affordable. Since it’s not often prepared these days, it’s best to give your butcher a few days’ notice so you can be sure they have it for you. Modern brining methods mean you probably don’t need to soak the roast to remove excess salt. However, ask your butcher – if in doubt, it is better to soak it. Place in a large container, cover with cold water and leave in the refrigerator overnight. Remove before cooking and rinse under cold water. If you don’t feel confident opening the roast as in step 1 of the recipe, ask your butcher to do this for you.

Preparation steps

  1. Open the bacon collar and remove any strings used to tie the meat together.
  2. Using a knife, carefully make cuts along the natural seams of the muscles, being careful not to cut through to the other side.
  3. Rub the exposed flesh with rosemary.
  4. Fold the bacon back up and tie it with 3 pieces of butcher’s twine.
  5. Place the roast in a very large pot and cover with cold water.
  6. Bring to the boil and skim off any foam that rises to the surface.
  7. Drain the water and cover with fresh, cold water.
  8. Dust the onion with cloves and add to the pan along with bay leaves, carrots, celery, garlic and peppercorns.
  9. Bring to a boil again, then reduce to a simmer and cook for 1 1/2-2 hours.
  10. Allow to cool and rest in the broth for at least 30 minutes.
  11. Strain 300ml of the bacon stock from the pan into a jug.
  12. Melt half the butter in a small pan and stir in the flour until it forms a paste.
  13. Cook for 2 minutes, then slowly add the bacon broth, stirring constantly.
  14. Let it bubble for another 4-5 minutes.
  15. Turn off the heat and stir in the remaining butter.
  16. Stir in parsley.
  17. Remove the bacon collar from the pan and place it on a board or serving plate.
  18. Cut into thick slices and serve with black pudding puree.
