Ingredients

  • 1 egg, beaten
  • 225g flour, plus some flour for dusting
  • 175g frozen butter
  • 10 streaky bacon strips, finely chopped
  • 100 g dried tomatoes in oil (approx. 12-16), finely chopped

  • small bunch of fresh basil, chopped

Preparation steps

  1. Sift flour and a pinch of salt into a large bowl.
  2. Grate in the frozen butter.
  3. Mix with a kitchen knife until all the butter pieces are covered with flour.
  4. Stir in 150 ml cold water until a soft dough forms, then knead with your hands.
  5. Wrap the dough in cling film and let it rest in the fridge for 30 minutes.
  6. Preheat the oven to 200°C/180°C fan/gas 6.
  7. On a lightly floured work surface, roll out half of the dough into a long rectangle measuring approximately 9 x 45 cm.
  8. Spread half of the filling ingredients along the dough toward one edge.
  9. Brush the other edge of the dough with egg and fold it over the filling. As you do this, press the edges of the dough together to form a long sausage roll.
  10. Brush the top of the roll with more egg, then cut into 3cm rolls.
  11. Using scissors, cut small V shapes into the top of each roll.
  12. Repeat steps 7-11 with remaining dough and filling.
  13. Arrange the rolls on baking sheets lined with parchment paper.
  14. Bake for 15-20 minutes until golden brown.
