Ingredients

  • 1 x 20cm round or 18cm square Christmas cake (see “Goes well” below)
  • 4 tablespoons raspberry or apricot jam, warmed and sifted
  • Powdered sugar, for dusting
  • 500g pack of marzipan
  • 1.3kg ready-to-roll white icing
  • brown, green and red food coloring
  • 9 whole cloves
  • black lettering glaze

Preparation steps

  1. Place the cake on a large board or shallow serving plate.
  2. Spread some jam over the cake.
  3. Dust a clean surface with a little powdered sugar.
  4. Roll out the marzipan until it is large enough to cover the cake.
  5. Carefully lift the marzipan onto the cake and smooth it out.
  6. Trim any excess marzipan from the base of the cake.
  7. Spread more jam over the entire cake.
  8. Knead 1 kg of white icing until smooth.
  9. Roll out the white icing on a surface dusted with powdered sugar.
  10. Roll it out until it is slightly larger than the size of the marzipan.
  11. Gently lift the rolled out icing onto the cake.
  12. Partially tap the icing off the sides to smooth and hold it in place.
  13. Let the rest of the icing stick into folds or pull it into shape with your fingers.
  14. Trim off any frayed edges of the icing.
  15. Roll 3 walnut-sized balls from the remaining white icing.
  16. Halve the remaining icing.
  17. Knead brown paint into one half to get a rich color.
  18. Wrap the brown icing well as it will be used for the branch.
  19. Divide the other half of the icing into 3 parts.
  20. Color one part red, one part light brown and one part green.
  21. Cut three marble-sized balls from the red icing and roll each into a teardrop shape for the robin’s breast.
  22. Use a cocktail skewer to add texture to the robin’s breast.
  23. Glue a teardrop-shaped breast onto each robin.
  24. Slightly flatten the base of the ball so the robins stand up.
  25. Divide the light brown icing into 3 balls and roll each into an oval shape.
  26. Pinch one end of each oval shape into a gentle point.
  27. Glue the tip of the oval shape to the robin to form the head.
  28. If necessary, cut off the robin’s tail.
  29. Insert a clove into each brown tip to form a small beak.
  30. Remove the round piece from the end of 6 cloves to leave spiky ends.
  31. Insert the spiky ends into the robins to form feet.
  32. Use black icing to give the robins eyes.
  33. Roll most of the dark brown icing into a long sprig.
  34. Attach the branch to the cake with a little more water or jam.
  35. Roll smaller branches out of the remaining dark brown icing.
  36. Cut leaves from the green icing and attach them to the branches.
  37. Add the robins to the cake.
