  • 1½ kg pumpkins
  • 300 ml pot of double cream
  • 150 ml milk
  • 3 cloves of garlic, crushed
  • 2 tsp thyme leaves
  • 85g grated Parmesan (or vegetarian alternative)

Preparation steps

  1. Preheat the oven to 150°C/130°C fan/gas 2.
  2. Cut the top off the pumpkin and scoop out the seeds and strings.
  3. Place the pumpkin on a baking sheet.
  4. In the meantime, heat the cream, milk, garlic and most of the thyme and season generously.
  5. When hot, pour the cream mixture into the pumpkin.
  6. Stir in 50 g Parmesan.
  7. Put the lid on.
  8. Bake for 1½ hours.
  9. Remove the pumpkin from the oven.
  10. Increase the heat to 200°C/180°C fan/gas 6.
  11. Remove the lid from the pumpkin.
  12. Sprinkle with pepper and the remaining cheese.
  13. Bake for another 15 minutes until golden brown.
  14. Scatter the remaining thyme leaves on top.
  15. Pour the pumpkin flesh into bowls.
  16. Serve as a starter with cheese cream and crusty bread.
