Ingredients

  • ½ finger-length piece of fresh ginger root, grated
  • 3 tbsp light soy sauce
  • 3 tbsp plum sauce
  • 1 tbsp peanut oil
  • 3 tbsp clear honey
  • 2 duck legs, with skin
  • 3 spring onions, finely chopped
  • 375g package of ready-rolled puff pastry
  • some flour for dusting
  • 1 egg, beaten

Preparation steps

  1. Mix the ginger with the soy and plum sauce, oil and honey in a deep bowl, then add the duck legs and turn to coat. Cover and chill for at least 20 minutes.
  2. Preheat the oven to 160°C/fan 140°C/gas 3. Place the duck legs on a non-stick baking tray and roast for 1½ hours, until crispy and golden brown. Meanwhile, place the remaining marinade in a small saucepan and simmer for 2 minutes, then allow to cool. When the duck is cool enough to handle, remove the skin and cut the meat into pieces. Mix with the cooled marinade and spring onions.
  3. Turn the dough out onto a floured surface and roll it out even thinner to form a sheet large enough to cut out 10 circles using a 9-10cm round cutter. Place 2 teaspoons of the duck filling in the center of each circle, brush the edges of the dough with a little egg, then fold the dough circles in half and press to form a crescent shape (any remaining duck makes a great filling) .
