  • 4 mixed peppers, deseeded and sliced
  • 2 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • Pinch of chili flakes
  • 100 g fresh white bread, crushed into breadcrumbs
  • 300g linguine
  • 85 g green, pitted olives, halved
  • ½ small package of basil, torn, reserving a few small leaves for garnish
  • Zest of half a lemon
  • 25g butter

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Place the peppers in a roasting pan and add half the oil.
  3. Season the peppers and spread them in a single layer.
  4. Roast the peppers for 30 minutes or until soft.
  5. Add the remaining oil to a frying pan.
  6. Add the garlic and let it soften over low heat for 10 seconds.
  7. Add chili flakes, breadcrumbs and spices to the pan.
  8. Toast the mixture until the breadcrumbs are golden brown and crispy.
  9. Transfer the toasted mixture to a plate and set aside.
  10. Cook the pasta according to the instructions on the package.
  11. Drain the cooked pasta, reserving a few tablespoons of the cooking water.
  12. Toss the cooked pasta together with the roasted peppers, olives, torn basil, lemon zest, reserved cooking water, butter and some spices.
  13. Sprinkle the dish with the crispy crumbs and additional basil leaves.
  14. Serve the roasted red pepper linguine with crispy crumbs.
