  • 2 eggplants, halved lengthways
  • 6 tbsp olive oil
  • 250g Bulghar wheat
  • 2 large onions, finely chopped
  • 1 tbsp ground cumin
  • 400g can of chickpeas, rinsed and drained
  • A handful each of coriander and mint, chopped
  • 1 garlic clove, crushed
  • Juice and zest 1 lemon

  8. Drain the bulgur and stir it into the onions with the chickpeas.
  9. Season.
  10. Mix the remaining oil with herbs, garlic, lemon zest, juice and spices.
  11. Place a quarter of the bulghar mixture on each plate.
  12. Top with half an eggplant.
  13. Drizzle some dressing on top.
